Smashed pea protein toast

A high protein breakfast with green peas, cottage cheese and poached eggs on whole wheat sourdough bread

Make this recipe to yield a high protein intake at the start of your day. This toast is mildly sweet and light but allows for ultimate satiation.


Ingredients: 2 pieces whole wheat sourdough 1/3 cup green peas (fresh or frozen) 1/3 cup cottage cheese 2 large eggs Black pepper to taste Pinch sea salt Fresh parsley to garnish 1: Start by poaching 2 large eggs in a boiling skillet of water with a lid. To poach the eggs use 2 small bowls (one for each egg), once water is boiling slowly drop eggs into water and cover reducing the heat. Cook for 3-6 minutes. Slowly lift the eggs with a slotted spoon and tap off any water. 2: toast bread until brown and crispy using a skillet or toaster. 3: Mix together 1/3 cup green peas and 1/3 cup cottage cheese in a small mixing bowl. Add sea salt and pepper. 4: Spread even amounts of cottage cheese and pea mixture over the toasted sourdough. Add eggs on top and garnish with fresh chopped parsley and extra pepper if desired.
